Peach & Apricot Torte

Ingredients

  • Batter Ingredients
  • 1 Cup unsalted butter – softened
  • 2 C granulated sugar
  • 4 eggs
  • 3 Cups All Purpose flour
  • 1⁄2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp ground nutmeg
  • 1⁄4 tsp ground ginger
  • 1 10-oz jar apricot pie filling
  • 10-oz sliced peaches
  • Glaze Ingredients
  • 1 Cup powdered sugar
  • 1 tsp cinnamon
  • 3 T milk

Instructions

  1. Pre-heat 12" Dutch oven to 350.
  2. Beat butter and sugar in a bowl until creamy.
  3. Add eggs, 1 at a time, beating after adding each egg.
  4. Add flour, salt, cinnamon, baking powder nutmeg and ginger.
  5. Spread 3⁄4 of batter into Dutch oven.
  6. Bake for 15 minutes.
  7. Spread pie filling over hot crust - spread to the edges.
  8. Layer peach slices over the pie filling.
  9. Drop teaspoons of remaining batter over filling layers.
  10. Bake 30 to 40 minutes.
  11. Allow to cool for 10 minutes.
  12. Mix glaze ingredients to desired consistency and drizzle over the warm crust.
