Peach & Apricot Torte
Ingredients
- Batter Ingredients
- 1 Cup unsalted butter – softened
- 2 C granulated sugar
- 4 eggs
- 3 Cups All Purpose flour
- 1⁄2 tsp salt
- 1 tsp cinnamon
- 1 tsp baking powder
- 1 tsp ground nutmeg
- 1⁄4 tsp ground ginger
- 1 10-oz jar apricot pie filling
- 10-oz sliced peaches
- Glaze Ingredients
- 1 Cup powdered sugar
- 1 tsp cinnamon
- 3 T milk
Instructions
- Pre-heat 12" Dutch oven to 350.
- Beat butter and sugar in a bowl until creamy.
- Add eggs, 1 at a time, beating after adding each egg.
- Add flour, salt, cinnamon, baking powder nutmeg and ginger.
- Spread 3⁄4 of batter into Dutch oven.
- Bake for 15 minutes.
- Spread pie filling over hot crust - spread to the edges.
- Layer peach slices over the pie filling.
- Drop teaspoons of remaining batter over filling layers.
- Bake 30 to 40 minutes.
- Allow to cool for 10 minutes.
- Mix glaze ingredients to desired consistency and drizzle over the warm crust.
