Meatloaf-Stuffed Peppers

Meatloaf stuffed peppers is a warm hearty dish that is quite easy to make and beautiful to serve on the table.  This recipe is easy to scale up or down for smaller or larger groups.

Meatloaf-Stuffed Peppers

Ingredients

  • 5-6 large bell peppers (yellow, orange, red)
  • 1 pound ground beef
  • ½ pound ground pork
  • ½ pound ground veal
  • ½ cup oatmeal (old fashioned oats)
  • ½ cup ketchup
  • 2 Tbsp. mustard
  • 2 eggs
  • ½ tsp. salt
  • ½ tsp. pepper
  • ½ tsp. dried red pepper
  • 5-6 drops hot sauce
  • 1 Tbsp Italian seasoning
  • ½ cup ketchup
  • 1 Tbsp Mustard
  • 4 Tbsp brown sugar

Instructions

  1. Mix meat, oats, 1/2 cup ketchup, 2 Tbsp mustard, eggs and seasonings until well incorporated.
  2. Cut the tops off of peppers, remove seeds and membrane.
  3. Stuff meat mixture into peppers.
  4. Bake in a 12" Dutch Oven at 350° for about 1 hour (8 coals below, 17 above) until the meat is cooked through. Check with a knife to make sure it’s hot inside or test with a thermometer and cook until an internal temperature reads 170°.
  5. Combine 1/2 cup ketchup, 1 Tbsp mustard and brown sugar to make a sauce. Spoon some of over each pepper, and cook a few minutes more.
